Description: Since we've been interested in beer, Belgium has often been a source of inspiration. A few trips took us there in our twenties to discover many of their traditions! For this one, we were inspired by a good classic that we've always found to be an example of balance between malt, hops, and brett. The rustic cereal profile provides light toasted notes well supported by the evolution of brett. Fermented in primary with a different saison yeast than Jazz Fusion, it then evolved for 6 months with a mix of 2 different types of brett. When we were first brewing, we already planned to incorporate dry hopping at the end of the aging process to bring a little freshness. The German Ariana hops, which we had the chance to evaluate directly at the farm last fall, were an ideal candidate for maintaining a good fruity and earthy balance. It could be described as a Brett Pale Ale.
